Ben Champion from Decent Espresso designed a spacer for v1.0 machines that goes between the Shower (lower brass part) and the Inner block (Upper brass part). There are 4mm, 5mm and 6mm Variants.
Here is a section through the group showing with the 6mm spacer.
You can see the temperature probe (dark brown) on the Right is now a long way away from the screen.
For the screw length, you will need an M5 x 12mm + Spacer thickness countersunk screw. So for the 6mm Spacer you will need an 18mm long screw, for the 4mm spacer you will need a 16mm long screw.
For manufacturing, do not use 3D printing. PLA cannot handle the temperatures and ABS is toxic. The 3D printing surface in general is not food safe. IMO just don't go there unless your are just testing the fit before you have something machined.
I'd have this part machined out of Ultem (PEI). Its a high quality plastic, same stuff we use in the manifolds. With Ultem you may still be able to have some temperature control, maybe...
Manufactures will usually just use the STEP file to make the part. The PDF drawing is for tolerances, spec etc so I have not put much detail into the drawing.
