Filter3 basket explained with Kaffee Macher and Scott Rao

A few weeks ago, on our EU tour, we spent the day with Benjamin from Kaffee Macher.  They run a very popular German-language coffee channel and recently started an English language channel.

We recorded a two part video about the upcoming Filter3 method (a basket and accompanying profile) for making filter coffee with a Decent Espresso machine.

Benjamin a great interviewer, and I'm really pleased at how this video managed to cover quite a lot of substantive information, yet not get too geeky either.

If you're curious about what Decent and Scott are working on for the next generation of Filter coffee, these two videos are a great overview.

As to “when will this new basket ship?” – we're still in R&D on this, and besides the basket I'm also working on a special-purpose app for making Filter3, to walk you through the prep, keep the water level about the grounds at the level we want, and to assist with making it perfectly.  I'm hoping to see all this done and released toward the end of the 2023.

AI Summary

This video explores the fusion of espresso and filter coffee using the Decent Espresso machine, featuring Scott Rao's innovative Filter3 basket. The conversation delves into data-driven coffee brewing, the evolution of the filter basket, and how precise control of flow, pressure, and temperature enables the Decent Espresso machine to create high-quality filter coffee.

Key Points

  • Scott Rao's Background
    • Started in coffee in 1994 and has written multiple books on barista techniques, espresso, and roasting.
    • Focused on data-driven research to understand coffee extraction and roasting.
  • Decent Espresso Machine's Role
    • Provides precise control over pressure, flow, and temperature.
    • Allows for new brewing possibilities, including filter coffee.
  • Evolution of the Filter3 Basket
    • 1st Attempt: A portafilter basket acting as a spray head for Kalita/V60.
    • 2nd Attempt: A deep basket with finely ground coffee, relying on controlled pressure, but inconsistent due to puck prep issues.
    • 3rd Attempt (Final Version):
      • Uses an 8 cm deep basket with large holes and a paper filter.
      • Controls flow rate via grind size rather than hole restriction.
      • Uses a precise, slow flow rate for balanced extraction.
  • Key Features of the Filter3 Method
    • Provides a “no bypass” brew similar to Tricolate/NEXT LEVEL brewers.
    • Prevents vacuum formation and overfilling with strategically placed holes.
    • Maintains stable extraction without excessive turbulence.
    • Achieves high extraction efficiency, even with decaf coffee.
  • Advantages of Using Decent for Filter Coffee
    • Customizable flow and pressure profiling.
    • Ability to fine-tune extractions beyond conventional espresso machines.

Conclusion

The Filter3 basket represents a breakthrough in brewing filter coffee using an espresso machine. By leveraging the precision controls of the Decent Espresso machine, Scott Rao's method offers a consistent and high-extraction alternative to traditional pour-over techniques. The result is a filter-style coffee with better clarity, repeatability, and control over brewing variables.
