In this video, we're making eggnog with a Decent Espresso machine. You can find the machines here.
Eggnog can be tricky to make, easily overcooked and clotted, or dangerously undercooked (raw eggs!). The steam wand on your espresso machine, along with a milk thermometer, is all you need to easily make amazing eggnog.
TLDR RECIPE:
1. In a blender, put:
1 large egg
150ml whole milk

2. Steam to 80ºC
3. Serve 50ml
4. Boozy variation: +5ml spiced rum
5. Espresso variation: +25ml espresso
6. Boozy Espresso variation: 8ml Amaretto

Espresso Machine Eggnog:
In a blender, put:
1 large egg
150ml whole milk
80ml salted caramel
(optional) powdered cinammon
steam heat the mix to 80ºC
(optional: briefly blend after heating)
serve into a small cup
I serve about 50ml
(optional) powder ground cinammon on top of the cup
Boozy variation:
add 10% of spiced rum (vanilla, oak flavors)
in a 50ml of eggnog mix, add 5ml of spiced rum
Espresso Eggnog:
25ml of espresso (medium or medium dark bean, pulled with "Espresso in the 80s" profile)
50ml of eggnog ("no alcohol" version)
Boozy Espresso Eggnog:
25ml of espresso
50ml of eggnog ("no alcohol" version)
8ml of Disaronno (or other Amaretto liquor)
